The One Ingredient Addition For Softer And Fluffier Mashed Potatoes
BY LUNA REGINA
Mashed potatoes can sometimes come out gummy and lumpy rather than achieving a buttery-soft texture. To prevent this, soak the peeled potatoes in ice cold water.
By soaking peeled potatoes in ice water for about an hour, the excess starch released by the potatoes when peeled is washed away, removing the main culprit of gummy potatoes.
After soaking, gently lift the potatoes from the water, being sure not to stir up the settled starch at the bottom of the bowl, and boil the potatoes until they are nice and soft.
