The New Mexico Burger That Inspired 2 Bobby Flay Menu Items

Celebrity chef Bobby Flay excels in all kinds of cuisines, especially the nuanced flavors of the American Southwest. While in New Mexico filming for Food Network, Flay discovered a burger at a restaurant called La Casa Sena that he was so enamored with, he created his own version of the dish for two of his restaurants.
The original burger is called the Sena Burger, which includes Wagyu beef, bacon, extra sharp cheddar, and roasted green chiles. Flay took his experience at La Casa Sena and implemented those flavors into his lunch menu at his restaurant Mesa Grill, as well as his own Santa Fe burger at Bobby's Burger Palace.
Flay’s menu has other dishes that appear to be influenced by Middle Eastern and Mediterranean cuisine. To recreate this burger at home, Flay recommends that you use 80/20 ground chuck beef, season the meat with just salt and pepper, and cook your patty on a hot cast iron pan to get that delicious smoky Southwest flavor.
