The Luxury Additions Anthony Bourdain Stated Never Belong In Mac And Cheese
BY RYAN CASHMAN
Anthony Bourdain was quite outward about his feelings toward mac and cheese with lobster and truffle oil, an opinion he voiced in his 2016 cookbook, "Appetites."
Bourdain wrote: "Get that damn lobster out of my mac and cheese!" He also notes that truffle oil contains a petroleum-based chemical additive and shouldn’t be used, either.
Bourdain’s own mac and cheese recipe is straightforward and uncomplicated. At the core, it uses elbow macaroni, butter, milk, four cheeses, and some cubed ham.
Bourdain spiced it up with little additions like mustard powder, cayenne pepper, and Worcestershire sauce. He once described it to Vice as a great hangover cure.
