The Lobster Dish Jean-Georges Suggests For Dinner Parties
By MICHELLE WELSCH
Certain occasions require pulling out all the stops, but let’s face it, entertaining guests can be stressful. Thankfully, we have Michelin-starred chefs and restaurateurs like Jean-Georges Vongerichten to offer some quality culinary advice, and to reduce the stress of hosting, Vongerichten relies on one simple yet impressive go-to recipe.
For fancy events, Vongerichten recommends serving grilled Maine lobster with summer corn, a simple yet luxurious combination that can help cultivate a celebratory atmosphere while giving the host time to partake in the festivities. The lobster is easy to prepare by simply boiling for 10 minutes before grilling with generous coatings of butter.
To prepare the corn, remove it from its cob and sauté it in either olive oil or butter, along with optional scallions, jalapeños, basil, or lime, and then serve as a bed for the lobster to rest on. For another take on the dish, James Beard Award winner Hugh Acheson serves grilled lobster with chili-lime butter and pairs it with white Burgundy.
