The Kiss Technique For Tasting Mezcal Like A Pro
By KAREN HART
Mezcal is a nuanced type of alcohol with varying sweet and smoky notes, and if you want to taste this rather strong agave liquor to its fullest, get ready to pucker up.
Before you taste it, select a proper cup for your mezcal. Lowball glasses work, but even better is a copita, a short, bowl-like glass that allows you to take in the aromas.

Once poured, stick your tongue into the mezcal in a "kiss" and then rub it along the roof of your mouth to experience the full depth of flavors in the spirit.
Once you’ve tasted the mezcal, sip it and swish it around in your mouth before swallowing. This allows you to fully experience the flavors without too much overbearing alcohol.
