The Key To Making No-Mayo Bean Salad That's Still Delightfully Creamy
BY JULIA HOLLAND
A simple bean salad provides a tasty and nutritious respite from mayo-based salads and slaws, but if you want the creaminess of mayo while keeping things light, try Greek yogurt.
Greek yogurt is a common high-protein substitute for mayonnaise, as the two have a similar tangy flavor and rich texture that pairs well with savory, sweet, and salty ingredients.
Simply incorporate the yogurt into the salad by adding it to your vinaigrette. Use a third of the amount of oil you'd usually include and replace the remaining 2/3 with yogurt.
If you prefer a more strongly flavored dressing like honey mustard, add a cup of nonfat Greek yogurt for every quarter cup of mustard and honey respectively.
You can also draw inspiration from Greek yogurt's Mediterranean origins with a yogurt, dill, lemon juice, garlic, and olive oil dressing. Your bean salad will be tasty yet light.
