The Key To Keeping Bacon Wrapped Around A Filet Steak

Filet mignon steaks are often served bacon-wrapped because it helps baste the steak and adds some umami flavor. When you’re doing the wrapping yourself, it can be difficult.
The key tip for keeping wrapped bacon in place is choosing the thin-cut kind. Thick-cut bacon won't finish cooking before the steak is done, and underdone bacon is slippery.
You can also stretch the bacon slightly, which will help the bacon lie flatter against the steak and crisp up nicely. It provides a nice tight and even thickness for wrapping.
For even cooking, partially cook your bacon before wrapping it around a filet mignon. This will ensure that everything is done cooking at the same time.
