The Ingredient Upgrade That Will Change Your Bolognese

There’s a simple way to upgrade your Bolognese sauce to make it silkier and richer with more meaty flavor. Instead of using only ground meat, try adding chicken liver.
Liver also adds a rich and silky texture to the sauce. Sauté the livers before they go into the sauce to caramelize them, but do not overcook them, which makes them grainy.
When the livers are added to the sauce, they will disappear among the other meat, leaving only richness behind. You should use the best quality livers, so check with your butcher.
