The Ingredient That Makes Soft Waffles With A Crispy Exterior

For waffles with crispy outsides surrounding plush, tender insides, all you need is an ingredient that you probably have stocked in your pantry: cornstarch.
As cornstarch heats up, its molecules swell to 6-to-10 times their original size to create more structure while softening the tough proteins in flour without affecting taste.
To incorporate cornstarch into your waffle batter, add it to the dry ingredients. A quarter cup of cornstarch and three-quarters cup of flour is a solid ratio to follow.
