The Important Tip To Know When Using A Cast Iron Pot To Boil Water

Boiling water can actively break down the pan's seasoning, like that nonstick coating you worked so hard to build up, so it’s important to know the right pot to use for the job.
Rapidly boiling water can cause the seasoning to lift from a cast iron pan, releasing little black flakes of the seasoned surface into your food.
You can safely boil water or water-based liquids (like soups, stocks, or stews) in a cast iron pot for up to an hour as long as the heat is low enough to maintain a gentle simmer.
If you've discovered boiling water can damage your pan's seasoning, the good news is you can simply remove any rust with some steel wool and re-season the pan.
