Green tea is an excellent choice for iced tea, but be sure to remember this important preparation tip: hot brew it. This results in a far less bitter sip.
While cold brewing preserves the fresh floral essence of green tea, its lengthy steeping in cold water can make the final beverage bitter.
While heat is a better option, it's important to avoid water temperatures that are too high, which can extract compounds that make green tea bitter and destroy its delicate flavor.
The best temperature range is between 140 and 185 degrees Fahrenheit. The most accurate way to achieve this is a thermometer, or you can watch for small bubbles as the water heats.
