The Honey-Gin Cocktail That Rose From The Ashes Of Prohibition

The Volstead Act of 1920 may have outlawed alcohol, but it certainly didn’t stop alcohol consumption. In fact, some of today's most enduring cocktails are a nod to the lively speakeasies and underground drinking dens of the '20s, like this prohibition-era cocktail that has seen a recent resurgence in popularity.
The appropriately-named Bee’s Knees cocktail features honey, gin, and lemon. Many credit the cocktail to Hotel Ritz Paris bartender, Frank Meier, who updated the Gin Sour by replacing the recipe’s standard cane sugar with smooth honey, which helped overpower the flavor of the bootleg gin liquor.
The cocktail has received so much buzz that a Brooklyn venue named The Bee’s Knees slings its own signature version with a pollen-coated rim, and the 2022 annual Bee’s Knees Week attracted 2,500 visitors. If you’d like to try it, simply dilute honey with water, mix with fresh-squeezed lemon juice, and add your favorite gin.
