Green tea has a classic and beloved flavor, but if you're looking to switch things up, try yellow tea, which is often described as a mellower version of green tea.
Like green tea, yellow tea leaves are derived from the camellia sinensis plant, but they go through a different processing method that gives them a sweeter, more floral flavor.
After initial heating, manufacturers will ferment the warm, moist yellow tea leaves by wrapping the tea in cloth or paper to let them reabsorb the moisture.
Once the manufacturer is happy with the yellowing process, the tea is completely dried. This added fermentation process gives the tea a mellow, tender profile.
