Hush puppies are a popular Southern side dish that should be tender instead of dense and bready. The ratio of cornmeal to flour in the recipe is crucial, but easy to remember.
No matter how large a batch of hush puppies you make, a three-to-one ratio of cornmeal to wheat flour is the only formula you'll ever need to make the dough.
Keeping this ratio is important because too much cornmeal won’t allow the hush puppies to hold together well, while too much flour will make them way too dense.
Besides cornmeal and flour, hush puppies require other ingredients like buttermilk, eggs, and lots of oil, and some non-Southern recipes may include sugar, as well.
