The Go-To Vinaigrette That Julia Child Swore By
BY KAREN HART
When it comes time to whip up a vinaigrette for your favorite salad, Julia Child's recipe for her dressing gets high marks. All you need is oil, vinegar, and some seasoning.
Child uses a ratio of one part vinegar and lemon juice to between six and eight parts oil. By going heavier on oil than acid, the dressing will be very mellow-tasting.
This ratio allows you to explore your culinary creativity, so you can customize this dressing with additional lemon juice and vinegar, or add herbs and seasonings.
This dressing isn’t just for salads, since it can be used to marinate meats like chicken or as a sauce to drizzle over grilled vegetables and fish.
