The Game-Changing Ingredient You Should Add For Juicy Turkey Burgers

Tasting Table recipe developer Michelle McGlinn knows how to make a craveable turkey burger that isn't dry or tasteless, and part of it involves adding a special dairy ingredient.
Goat milk is McGlinn's secret ingredient that she adds to the turkey meat mixture. It has a higher fat content than cow's milk, making it an ideal addition to lean meats.
McGlinn says, "For turkey burgers specifically, goat milk is great because of how creamy and dense it is [which] helps moisten the meat and prevent it from drying out.”
Goat milk is also higher in protein and easier to digest than cow's milk, allowing diners with lactose sensitivities to enjoy its rich flavor without any unpleasant side effects.
McGlinn also notes that the subtle tanginess and mild sweetness of the milk complement the flavor of the poultry, as well as any other flavorful mix-ins you can (and should) add.
