The Fruity Way Martha Stewart Sweetens Muffins Without Adding Sugar
BY KAREN HART
In an Instagram post, Martha Stewart explains how she sweetens muffins without adding sugar by adding a "combination of golden and dark raisins with prune juice."
These fruity flavors make up for the missing cup of sugar. However, by omitting sugar, some of the flavors of other ingredients decrease while the muffins' texture becomes hard.
To mimic sugar's ability to help your muffins maintain moisture, Stewart likes to add some nonfat yogurt, which makes for a moist muffin with a "light texture."
Then, to enhance her muffins' overall taste and texture, Steward adds molasses, ensuring a moist tender crumb with a warm, comforting taste.
