The French Sauce Anthony Bourdain Called 'Magical'
BY KAT LIEU
The honest and opinionated chef Anthony Bourdain once referred to rouille sauce, a thick condiment or emulsion from France, as "the magical condiment," according to Food & Wine.
The perfect balance of garlic, lemon and saffron makes the sauce delicious. Lemon is bright, garlic is aromatic, and saffron rounds the sauce out with an earthy sweetness.
What potentially made the sauce better for Bourdain was it perhaps nurtured his inner child, reminding him of all the flavors experienced during his childhood vacations in France.
