The Fermented Beverage That's A Lighter Alternative To Kombucha

For all its charm and ubiquity, kombucha's boldness is not for everyone. If you're one of those people, try Jun instead, which is much lighter in essence than kombucha.
Jun's fermentation process also involves a symbiotic culture of bacteria and yeast, but it's adapted mainly to thrive on green tea and honey instead of black tea and cane sugar.
The main sweetener that shapes Jun's fermentation is honey, which has a different yeast culture and less fructose and glucose than sugar. So, Jun has a higher alcohol content.
Jun also ferments in a short period of around a week in cool temperatures, giving it a more delicately sweet-tart tone, a less acidic bite, and a stronger effervescence.
