The Extra Step For Perfectly Roasted Zucchini

Roasting zucchini is a great way of bringing out its natural sweetness, but to give the veggie a perfect texture and flavor, give it a quick sear before putting it in the oven.
Searing your zucchini halves or spears before introducing them into the oven allows the succulent surface of the zucchini to char before it loses moisture.
The double heat of this method produces a zucchini that is tender, not mushy. For best results, sear it cut-side down in an oiled pan for about 5 minutes or until golden brown.
Then, pop the skillet into the oven for about 25 minutes, checking regularly to ensure the squash is charred rather than burnt. The zucchini will be textured, creamy, and soft.
