The Easy Way To Ensure Fried Chicken Stays Hot And Crispy At A Cookout
BY MATTHEW SPINA
Next time you are frying up chicken for a party or cookout and need to keep it warm while it rests, grab an oven-safe rack and preheat your oven to a low temperature.
Place the grated rack over a baking sheet, leaving space for air to circulate underneath, and put it in an oven preheated to 250 degrees F.
Then transfer the chicken straight to the rack as you cook it to drain, and keep it in the oven to prevent it from cooling off.
The elevated rack will maximize air circulation and allow excess oil to drain, while the warm oven will keep the chicken hot enough to serve without overcooking and drying it out.
