When cooked properly, scallops have a crispy crust and creamy, tender center, but if you're having trouble achieving this at home, it's likely because your scallops are too wet.
The essential way to ensure a gorgeous brown crust is by starting with a dry scallop, so make sure to pat your scallops dry with a paper towel before cooking.
Additionally, salt your scallops after you dry them to draw out any excess moisture. Let them rest for at least 10 minutes or even overnight before patting dry again.
From there, it should be easy to throw the scallops in a pan and sear them for just a few minutes until they develop a golden-brown crust without overcooking them.
