The Dried Seasoning That Will Elevate Grilled Tuna Steaks
By MEGGAN ROBINSON
Tuna steak is delicious when cooked properly, but has a bit of a reputation for drying out. Gentle and even cooking is key, but there’s more to preparing tuna than making sure it comes out moist and tender; and you’re going to want to use an excellent seasoning to make your meal truly perfect after all that effort.
Renowned TV chef, restaurateur, and cookbook author Lidia Bastianich sings the praises of dried wild oregano for seasoning fresh tuna steaks hot off the grill, specifically Sicilian wild oregano. It is an autochthonous variety of oregano, meaning it's unique from other varieties of the herb, with a more intense flavor.
Wild oregano pairs incredibly well with perfectly grilled tuna that's been drizzled with olive oil, but remember to use it sparingly, since it's far more potent than the dusty dry oregano you can buy at any old grocery store. Online sources for procuring Sicilian oregano include food procurer Tasting Sicily as well as Amazon.
