The Dish Alton Brown Predicts Will Be Trending In 2023

Alton Brown is known as one of the more modern Food Network chefs who's always on the lookout for new and fresh ideas, so it’s worth paying attention when he announces a trend to watch for. On December 5, 2022, Brown tweeted his prediction of what the number one trending dish of 2023 will be, and it’s divisive.
Brown tweeted, "Dry aged fish will be the 'it' dish of 2023. #CulinaryTruth". While some of his followers agreed, others were a bit more skeptical; however, we can tell you that dry-aged fish really is something special, with a delicate, melt-in-your-mouth texture that’s full of umami lusciousness, so perhaps it's time for this dish's moment.
Proof of this trend can already be found in places like Los Angeles, where hotspots throughout the trend-setting city are all over dry-aged fish, serving it as sophisticated tartare, sashimi, and more. Dry-aged beef has already enjoyed rampant popularity with restaurants and home chefs for years, so dry-aged fish's time may soon arrive.
