The Cut Of Steak Michael Symon Could Do Without
BY KAREN HART
One of the big challenges for beginners when cooking steak is figuring out what cut you prefer, but celebrity chefs like Michael Symon, host of "BBQ USA," are willing to share their recommendations. While grill master Symon has plenty of cuts he loves, there's also one cut of steak that he refuses to buy and cook.
Filet mignon is a small, boneless piece of meat from the tenderloin of the cow, prized for its tender, melt-in-your-mouth quality and always fetching a high price. However, Symon isn’t a fan, stating that "It has no fat; it has no texture," and he prefers a slab of meat that has flavorful fat and marbling rather than just tenderness.
Symon would much rather serve up some ribeyes, which are both tender and flavorful and can hold up to a longer cooking time without losing all of their juiciness. The chef notes the fatty nature of the ribeye makes it the perfect choice for steak lovers who are looking for more flavor, not to mention it's cheaper than filet mignon.
