You can turn almost any large cut of beef into a roast, but nothing comes even close to that melt-in-your-mouth magic that tenderloin delivers.
A tenderloin is sourced from a cow's lumbar area, which gets less exercise. This makes the meat naturally tender since there's little to no tough connective tissue to chew through.
This cut is also very lean, which means it's low on fat and has a milder flavor. Thus, it's best for showcasing the meat's quality and gives seasonings and marinade room to shine.
