Chef Anthony Bourdain was known for traveling the world and highlighting underrated culinary gems, and the chef pinpointed a certain cuisine as one that deserves more credit.
Bourdain said that Mexican cuisine, with its rich tapestry of flavors and time-honored techniques, is very undervalued in the face of stereotypes and fast food versions.
The chef strongly criticized the notion that Mexican food should be cheap, calling this a “racist assumption” which undermines the heritage and labor that goes into each dish.
Bourdain said that the intricacies of the cuisine could be seen in both complex dishes and basic yet very nuanced and involved Mexican sauces, from salsa roja to mole.
