The Creamy Way To Thicken Mushroom Sauce Without Cornstarch

To retain and concentrate the robust flavor of mushrooms in your mushroom sauce, use this two-step method: Reduce the sauce and introduce a splash of cream.
Thickeners like cornstarch dilute the mushroom's flavor and give the sauce a gummy texture. With this method, you complement the mushroom's notes and create a velvety sauce.
Saute your mushroom base before adding a liquid and letting the sauce simmer gently. Once it is visibly thickened, add a few tablespoons of heavy cream and stir to incorporate.
Continue to simmer the sauce, allowing the cream to thicken. Adjust the seasoning and remove the sauce from heat once you're satisfied with the taste and consistency.
