Buying bigger cuts of beef at Costco can sometimes get costly. One way you can save money and get more bang for your buck is by choosing beef with a smaller fat cap.
A fat cap is a layer of white fat on top of a beef cut that's often trimmed off before cooking. While it helps keep the meat tender and produces drippings, most of it is cut away.
