The Compound Butter That Seriously Elevates Hibachi Steaks

While the heat of a flat top griddle lends Hibachi steaks its characteristic savory sear, there's another key ingredient: Compound butter made with garlic and seasonings.
According to a YouTube video by Back-Yard Hibachi, Japanese steakhouses use several types of garlic butter, the most basic being a mix of room-temperature butter and garlic cloves.
However, you can easily prep a richer version by processing your garlic cloves with heavy whipping cream and salt first to create a salty, garlicky foam that's intensely pungent.
Mix this combination with your softened butter by hand in a bowl or a stand mixer. Once it combines, transfer your compound butter to a smaller bowl and put it in the fridge.
To enhance the savory flavor further, combine chicken seasoning, a dash of sake, and a sprinkle of hondashi with your prepped butter to give your steak a complex, meaty taste.
