Sauerkraut is a staple ingredient of an authentic Reuben that can inadvertently make it soggy. To avoid this, drain off the sauerkraut's excess liquid before using it.
Sauerkraut is fermented cabbage, which means it's usually stored in some sort of brine or water. To drain it, simply shake it off with a fork or use a slotted spoon.
