The Canned Vegetable That's Perfect For Caramelization
BY Kashmir Brummel
Caramelizing canned artichokes can majorly upgrade the veggie, rewarding you with a rich sweetness, greater depth of flavor, and new chewy and crispy textures.
For the job, use unseasoned artichokes over marinated ones; the herbs and spices can distract from the veggie's taste. You should also use artichokes packed in plain oil or brine.
To turn canned artichokes into an appetizer, start by draining and patting them dry. If you have whole hearts, cut them in half, and then add oil to a skillet over medium heat.
Place the artichokes cut side down in one layer on the skillet, and cook until they're heated through and the cut sides are brown and crisp. Serve with butter and lemon juice.
If you want to add canned artichokes to other dishes, begin by draining and drying (and slicing if needed) them. Then, add them to a skillet with olive oil and a little butter.
Give the pieces time to cook over medium heat so the sugars caramelize. Once they take on some color and crisp up at the edges, remove them from the pan and add them to your dish.
