The Canned Soup Shortcut For Quick And Inexpensive Risotto

Making a traditional, proper risotto can take up 45 minutes, and shouldn’t be rushed if you want to achieve that perfectly creamy texture. However, if you don’t have the time to slowly stir the pot of rice and stock over the course of almost an hour, you can take a simple shortcut with the help of creamy canned soup.
Instead of slowly adding broth to the rice while cooking, use store-bought chicken broth and condensed cream of mushroom soup, which can be added to the risotto at the same time. Bring the mixture to a boil and reduce the heat to very low, letting the rice cook slowly for about 25 minutes or until it absorbs the liquid.
You can also use other canned soups beside cream of mushroom, like condensed cream of chicken soup, Campbell’s Cream of Cremini & Shiitake Mushroom Soup, Cream of Bacon Soup, Cream of Broccoli Soup, or Cream of Asparagus Soup. Top the risotto off with vegetables, meats like chicken, and/or fresh herbs to finish.
