The Butter Trick For The Perfect Crack In Loaf Cakes

Part of what makes loaf cake so visually appealing is the crack down the surface that makes it look fluffy and textured. You can even ensure a great crack using a little butter.
Loaf and pound cakes are prone to splitting in random places as the dense batter cooks, but by applying a line of butter down the center, you can control where the crack spreads.
After pouring the batter into a loaf pan, add some softened butter to a piping bag and pip a single straight line of butter lengthwise down the center to create a clean split.
For thick batters, use a spatula to first carve out a line before applying the butter. This trick encourages the batter to split precisely down the middle for a beautiful cake.
