The Bicycle Thief Cocktail Is A Citrus Twist On The Negroni

The Bicycle Thief cocktail has Campari, gin, grapefruit and lemon juice, and club soda. Similar to the Negroni, it was born from New York City's drinks revival in the early 2000s.
The cocktail strikes the perfect balance between bitter botanicals and sweet citrus while the soda gives it a bubbly lift. It's a crowd-pleasing aperitif in a highball glass.
It was created by bartenders Zachary Gelnaw-Rubin and Abraham Hawkins in the Long Island bar Dutch Kills and was later recorded in the 2016 book "Regarding Cocktails."
The cocktail's name comes from the 1948 cinematic masterpiece of Italian neo-realism "Bicycle Thieves." Despite this rugged namesake, it's a drink perfect for a warm day.
