Cheese and wine is a match made in heaven, served together for centuries by matching wines and cheeses from the same region, but not all pairings are good. It's important to be aware of the wine's characteristics as well as the cheese’s family, and when it comes to Colby cheese, these are the best wines to pair with it.
Colby’s firm texture and mild, buttery flavor means it pairs well with both white and red wines; white wines like Riesling, Sauvignon Blanc, and Pinot Grigio are great with it. As a semi-hard cheese with a salty, nutty flavor, Colby also pairs well with dry, oaky white wines, as well as fruity, light-bodied, and sparkling wines.
Red wines make for a great pairing with Colby; bottles of bold Cabernet Sauvignon, especially ones that have berry, vanilla, or espresso notes, go very well. Fruity reds like Malbec and Pinot Noir also complement the flavors of Colby, along with red wines that do not taste heavily of oak, but have a strong flavor.
