The Best Way to Reheat Chinese Food
By ALISON SPIEGEL
Do you have too many Chinese food leftovers lurking in your fridge? If you want to restore these dishes to even a sliver of their former glory, forget the microwave or the oven, which will turn most dishes into a soggy mess; you should use this appliance instead.
Heating up leftovers on the stovetop is the best option: just add a bit of oil to a wok or large pan and warm up noodles, rice, or vegetables over high heat for a couple of minutes. However, you can also make adjustments depending on how much time you have.
You should reheat each item separately for the most consistent effect, but if you're short on time and want to reheat every dish at once, keep a careful eye on the pan. Give the edges of your dish a little char if you like, or throw in a dash of soy sauce for extra flavor.
