Instead of using tall glasses or fancy ramekins to present your lemon posset, you can use the hollowed-out lemons you already have as cute serving bowls.
Serving the posset in lemon bowls signals the flavors in the dessert, and after the party, you can simply discard the peels or add them to the compost.
For this presentation, select hefty, flawless lemons of uniform size with plenty of juice, like the Yen Ben variety. Keep the leaves attached for extra elegance.
Halve washed lemons lengthwise, and carefully scoop out the flesh with a spoon. Pour the prepared posset into the lemon half, let set and cool, then place in the fridge to firm.
