The Best Way To Add Eggs To Your Breakfast Hash Is Also The Easiest

A hash made of leftover potatoes and/or meat sauted in a skillet is a delicious and easy way to start the morning, especially if it’s topped off with a fried egg.
Some recipes cook an egg directly on top of the hash, but it's much easier to just fry the eggs separately. Start by heating a pan greased with oil over medium-high heat.
Add the eggs, sprinkle salt and pepper on top, and let them sit in the pan until the whites around the yolk are cooked and there’s some crispness on the edges.
If you like your eggs very crisp, use oils with a higher smoke point that can get hotter than butter, allowing the egg’s edges to turn crunchy while the yolk remains runny.
While you also can top a breakfast hash with a poached or scrambled egg, a simple fried egg cooked in minutes keeps the dish easy and low-key.
