Not all onions are the same, and different types are best for different types of recipes. For caramelized onions, you should be using the Spanish onion.
Spanish onions are a type of yellow onion that are large and covered with thin, golden skin. They are sweet and mild thanks to their low sulfur content and high sugar content.
The sulfur and sugar content are desirable for caramelizing because sugar means more browning and sweetness, and low sulfur means less of a bite.
