The Best Type Of Cooking Technique For Lamb Ribs
BY NIKITA EPHANOV
With all the extra tissue that comes with lamb ribs, it's essential to take extra care during preparation. The key is to think low and slow for a tender inside and crispy exterior.
Slow cooking is critical to achieve that melt-in-your-mouth texture. Whether on the grill or in the oven, allow the lamb to cook for two hours at around 300 degrees Fahrenheit.
Wrap the lamb in parchment paper and foil to make the heat application even. There's no need to glaze the meat during this stage — just a sprinkle of salt and pepper will do.
Once they turn tender to the touch, switch the ribs to direct heat. Glaze the lamb, and cook it on the grill for 10 minutes or in the oven for 25 minutes.
