Rice flour is a common gluten-free baking ingredient, but if you can't find it in stores near you, try almond flour for a similar texture with a nuttier, slightly sweeter taste.
Almond flour is made by skinning, soaking, and finely grinding almonds. It's ideal for all kinds of cakes, delightful chocolate chip cookies, and sturdy, savory breads.
To use almond flour as a rice flour substitute, simply follow a 1-to-1 ratio. However, almond flour is only a good substitute in baked goods, and might fail in other applications.
Rice flour is often used to thicken soups and sauces, and as a batter or binder in fried foods. Almond flour is too coarse to use with liquids, and burns easily in high heat.
However, if you're planning on making recipes for buttery shortbread, pancakes, or blueberry muffins that call for rice flour, go ahead and use almond flour instead.
