The Best Egg Salad Ingredient Swap For Mayo Haters
By BRIANNA CORLEY
Popular Science reports that 20% of people surveyed in the U.S. have a strong dislike of mayonnaise. Countless American dishes use this condiment, but mayo haters are finding ways to prepare these classics while still giving the end product a satisfying flavor; for an example, here's a great ingredient swap for a mayo-free egg salad.
You can make a creamy and delicious egg salad by making a "sauce" out of white beans, instead of using mayo. To try this alternative, simply mash up some freshly-cooked or canned white beans, but you should leave the mash somewhat chunky to add a more interesting and varied texture to your final egg salad.
The final salad will be rich and satisfying, and even if you do like mayo, using white beans will add a plant-based boost to your diet, and it's certainly easier than making your own mayonnaise, if you're a stickler for homemade ingredients. The white bean mash is also 100% vegan, so it can and should be used for more than egg salad.
