Soda is great for preparing meat since it can add flavor and tenderize tough proteins. It is best for more finicky cuts, such as collagen-laced brisket or ultra-lean pork ribs.
These cuts are tough and need to be marinated or braised rather than being cooked as they are. Soda can help transform them from chewy and nearly inedible to meltable and decadent.
Keep in mind that each soda will bring different aspects to meats. Colas will give beef flavors of caramel and vanilla, while root beer or Dr. Pepper will offer a spicier zing.
Typically, a 12-ounce can of soda will work well as a marinade for about 2 pounds of meat. If you’re looking to tenderize meat without adding flavor, club soda is the way to go.
