The Best Cucumbers To Utilize For The Crunchiest Pickles
BY EMMY SCHNEIDER-GREEN
Choosing the right type of cucumber is very important when making pickles. For the crunchiest pickles that aren't soggy and limp, Kirby cucumbers are the way to go.
Kirby cucumbers have a petite size and bumpy skin, and the firm flesh inside absorbs the flavors of the pickle brine while holding up well during the fermentation process.
You can find these cucumbers at a farmer’s market, or try growing them yourself. They're not very common in mainstream grocery stores, but may show up during peak season.
If you have trouble finding cucumbers labeled as "Kirby," cukes labeled as "pickling cucumbers" or ones with a smaller size and firm texture will do just fine.
