A leg of lamb can be cooked in almost countless ways, but one method in particular guarantees a flavorful, tender, and succulent meal every time.
The leg of a lamb is one of the most tender cuts, requiring no braising, stewing, or marinating, so roasting in the oven is both super simple to do and produces amazing results.
Roasting yields tender meat with a browned, caramelized crust on the outside. You should roast lamb at around 300 to 325 degrees Fahrenheit, and make sure to get the timing right.
Place your lamb in a roasting pan and season to taste, then put it in your preheated oven. You'll want the meat to reach an internal temperature of 145 degrees F for medium rare.
Reaching this temp takes about 20 to 25 minutes of cooking for every pound of meat. The cooking time will be slightly longer if you want your meat medium or well done.
