The Best Broth To Roast Potatoes In For Mind-Melting Flavor
By RYAN CASHMAN
If you want to amp up the flavor and crispiness of your roasted potatoes, you should try melted potatoes. They’re crispy on the outside, but luscious and creamy on the inside.
The effect is achieved by roasting seasoned potatoes in the oven at 450 degrees Fahrenheit for a crisp exterior, then covering them with broth and baking them again.
A hearty vegetable broth will give your spuds some flavor, but the easiest way to improve melted potatoes is to use chicken stock, which is richer with a more savory taste.
Chicken stock has just enough fat to add tons of flavor without making the dish greasy, and makes your potatoes taste like they were roasted underneath a whole chicken.
