You also tend to get a pretty big hunk of beef for your money, so if you end up with leftover prime rib, this is the best reheating method to keep the meat moist.
Prime rib is usually cooked in a low-temp oven, then broiled for a browned crust, and the reheating process is similar. Set your oven to 250 degrees F before heating the meat uncovered on a wire rack set over a rimmed baking sheet, until the internal temp reads 120 degrees F on a meat thermometer, approx. 60-90 minutes.
In order to brown the outside, take the meat out of the oven, dry the exterior with paper towels, and sear it on all sides in a hot, oiled skillet for one to two minutes per side. This method will restore the prime rib's crust without taking it past its original cooking temperature, so your expensive cut won't be even a smidge dry.
