The 3 Ingredients Tom Colicchio Can't Stand Have One Thing In Common

While the flavors of the ingredients are the most important influence on a dish, texture also plays a huge role when it comes to appreciating — or disliking — certain foods. In an interview with The New York Times, chef Tom Colicchio revealed that he can't bring himself to enjoy foods with viscous textures, including these three ingredients.
The three slimy foods that Colicchio keeps off his plate are okra, sea cucumbers, and grated mountain yam. Okra is a bit notorious for its slimy interior, and while this veggie is an essential ingredient for delicious gumbo, and there are ways to cut and fry it to reduce the mucilage, it's not possible to eliminate the slime completely.
Meanwhile, sea cucumbers deliver plenty of health benefits, but they can also get pretty slimy, and mountain yam is known for turning from a firm tuber into a pile of slime when grated. This yam is appreciated by many cultures that use it in soups, baked goods, and more, but it may take a special preparation to get Colicchio to enjoy it.
