The 2 Step Process Andrew Zimmern Uses For The Best Grilled Chicken
By EMILY BOYETTE
Chicken is a versatile meat that absorbs pretty much any flavor it’s given, making it an easy and delicious way to add extra nutrients and lean protein to your diet. Grilling is a great way to cook chicken, resulting in beautiful grill marks, a moist texture, and a slightly charred flavor, and Emmy-winning chef Andrew Zimmern has some great advice for perfectly grilled chicken.
In a YouTube video titled “Andrew Zimmern Cooks: Barbeque Chicken,” Andrew Zimmern revealed his top tip for grilling chicken. Zimmern pointed out his technique to the audience, saying, “You’ll notice, coals on one side, chicken on the other side, so that I can actually smoke my chicken, which is going to give me some of that traditional barbeque technique.”
This method allows the chicken to cook at a lower temperature for longer, encapsulating those flavors from the grill without risking overcooking. To finish off your chicken and give it that grilled texture, you’ll want to move the chicken over to direct heat for the last 10 minutes of cooking to give it color, grill marks, and slight crispiness that Zimmern calls “maximum texture contrast.”
